Pumpkin Muffins

This is my mother’s recipe. She has baked pumpkin muffins every single year since I can remember. I love the smell of them baking because it always reminds me of the fall.

Ingredients

  • ⅔ cup vegetable oil
  • 2 ⅔ cup sugar
  • 4 eggs
  • 1 16-ounce can pumpkin puree
  • ⅔ cup water
  • 3 ⅓ cups flour
  • 2 teaspoons baking soda
  • 1 ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves

Preparation

  • 1Blend together the first 5 ingredients.
  • 2Mix in the remaining 6 ingredients.
  • 3Pour into mini muffin pan and bake for 10-12 minutes at 350 degrees.
